Whisky & Tonic Highball

Few whisky serves generate more surprise than whisky and tonic. For many drinkers, tonic belongs exclusively with gin, yet its combination of bitterness, citrus and carbonation can work beautifully with the right whisky. The Whisky & Tonic Highball is crisp, refreshing and quietly complex, making it one of the most overlooked serves in the whisky world.

The secret lies in balance. The tonic should complement the whisky rather than dominate it, allowing fruit, vanilla and spice notes to emerge whilst adding a refreshing bittersweet edge. The result is a Highball that feels familiar enough to be approachable, yet different enough to spark conversation.

Whilst gin and tonic may dominate modern drinking culture, tonic water has been paired with a wide variety of spirits for generations. Whisky and tonic has remained something of a hidden gem, often discovered by accident rather than design. Yet many lighter whiskies possess exactly the characteristics needed to work with tonic’s distinctive bitterness.

The rise of premium tonic waters has only improved matters further, offering drinkers a wide range of styles that can be tailored to different whiskies.

For those looking to challenge their assumptions about whisky, this might be the perfect place to start.

 Ingredients:

  • 50ml whisky

  • 150ml premium tonic water

  • Large ice cubes

  • Orange twist

  • Optional: sprig of thyme

Preparation:

  1. Fill a chilled Highball glass completely with large ice cubes.

  2. Add the whisky before slowly pouring over the chilled tonic water. Stir gently once or twice to combine.

  3. Express the oils from an orange twist over the drink before adding it to the glass. Garnish with a small sprig of thyme if desired.

Flavour Profile & Experience

The Whisky & Tonic Highball is bright, crisp and surprisingly sophisticated.

The tonic water introduces a gentle bitterness that highlights citrus and fruit notes within the whisky, whilst the carbonation creates a light, refreshing texture. Depending on the whisky selected, expect flavours of orange peel, vanilla, honey, orchard fruit and soft spice.

The finish is long, clean and remarkably refreshing.

Variations & Modern Twists

Mediterranean tonic water can introduce subtle herbal notes that pair beautifully with lighter whiskies.

For a brighter citrus profile, add a thin slice of pink grapefruit alongside the orange twist.

Those looking for a slightly sweeter serve can experiment with elderflower tonic water.

A sprig of rosemary can also work well with whiskies showing more pronounced oak and spice.

The Whisky & Tonic Highball works best with lighter, fruit-forward whiskies that offer citrus, vanilla and orchard fruit character. Heavy sherry influence or intense smoke can sometimes clash with tonic's bitterness, so a lighter style is generally the better choice.

Not all tonic waters are created equal. A high-quality tonic such as Fever-Tree Indian Tonic Water, Double Dutch Indian Tonic or Franklin & Sons Natural Indian Tonic will generally produce a cleaner, more balanced result than standard supermarket alternatives.

The Whisky & Tonic Highball pairs beautifully with seafood, grilled chicken, charcuterie, light pasta dishes and summer salads. The bittersweet finish also makes it an excellent aperitif before a meal.
